Santoku kitchen knife

The Santoku knife originates from Japan. Unlike a classic chef's knife, it has a much thinner blade and therefore less wedge effect when cutting. The steel is optimised for maximum razor sharpness and the Santoku chef's knife is used to cut vegetables, meat and fish on a chopping board. The wide blade rests on the fingers and can be used in both a chopping motion (pressure cut) and a rocking motion. Thanks to our experience as knife makers and our collaboration with professional chefs, every Santoku knife from Schmiedeglut is also very light, perfectly balanced, ergonomically shaped and has cleanly rounded edges.

Which knife for what?

The classic chef’s knife can handle almost everything, but it’s not particularly good at anything. With the right knives, cutting while cooking becomes a true passion.

Santoku knife for finely chopping meat, fish, and vegetables on the cutting board. The thin edge and ergonomic shape glide effortlessly through tomatoes and onions — cutting without tears.
Paring knives peel potatoes and hollow out peppers. Ideal for “snibbling,” just like grandma taught us.
Bread knife, of course, for slicing bread. Perfect at the grill for crusted roasts, cutting melon, pumpkin, cheese wheels, or hard cheese. Thanks to its serrated edge, it requires sharpening less often.
Utility knife as an all-purpose knife in the kitchen. The particularly thin and pointed blade is great for filleting, slicing steak, and carving roasts. As a veggie knife, it’s ideal for long vegetable sticks or portioning fruit for smoothies. It also gathers herbs from the garden and doubles as a mushroom knife when picking porcini.
Gourmet folding knife — handy for when you’re on the go and other knives are dull. The small and handy knife for the forest and tough outdoor use. Non-slip in the hand thanks to the forged rock finish and with a very hard yet robust blade made of stainless D2 steel. Through heat treatment with Deep-Freeze (cryogenic freezing with liquid nitrogen after quenching in hardening oil), we achieve a very fine-grained steel structure with high hardness (approx. 60 HRC Rockwell). The result is a knife that will never let you down and that you can always rely on.

Why do you need a hand-forged Damascus knife and why do we invest so much time and money in producing a unique knife?

"Because I can" is the simple answer from company founder and knife maker Nandger Franck.

However, these custom-made knives are also often produced in small series as "Unlimited Knives," which are far more than normal Damascus knives and often accompany their owners throughout their lives as high-quality cutting tools.
