Ich schärfe meine Messer seit langem mit japanischen Wassersteinen. Das ist relativ unspontan und wenn in der Küche mal ein Messer akute Aufmerksamkeit braucht, muß man die Steine erstmal wässern... Mit den Dia-Sharps kann ich sofort trocken nachschärfen, wobei die Messer schneller (gefühlt doppelt) schärfer werden.

Der Abtrag ist deutlich besser als bei Wassersteinen oder auch dem Duo-Sharp System von DMT (das mit den Plastik Punkten). Die Investition zahlt sich besonders bei sehr harten Messern aus (HRC über 57).
