Knife forging courses

- At 09:00 we begin the course at the knife forge located at Grebenhainer Str. 3, 36355 Grebenhain.
After a short safety briefing, we will design your custom knife together. Whether it’s a chef’s knife, carving knife, a traditional snack knife for your Lederhosen, Santoku, hunting, or outdoor knife – we will help you create the perfect knife design. - Shortly afterwards we get started: using an angle grinder, belt grinder, and files, we shape your blade. Once the blade blank has been brought into shape, we work with you to grind the rough blade edge and then drill the holes for the handle scales.
- After a delicious lunch, we complete all remaining steps, harden the blades, and temper them back to 60–61 HRC Rockwell. While the blades are in the tempering oven, we discuss knife care and knife sharpening and answer any remaining questions.
- Afterwards, you select a suitable handle material for your knife. This will then be prepared by sawing it into two halves and surface-grinding it flat. This concludes Day 1 of the knife-making course.
Day 2:
- We begin again at 09:00, now focusing on completing the knife.
Before the start of the second course day, our instructor has already applied the blade finish, allowing us to begin directly with preparing the handle scales. Drilling holes, sawing them to shape, and finishing the front surfaces so the handle can already be glued to the blade. - After the handle has been glued, and following a short explanation, you will begin using the belt grinder to roughly shape the handle and adapt it to your hand. The final shape is then completed by hand, removing all scratches created during grinding, and the handle is then polished or oiled.
- At the end, we sharpen your knife to razor sharpness and hope that your self-made knife will bring you many years of enjoyment.

The day begins with grinding the blade. Modern belt grinders and tools are available to help you achieve the most perfect blade possible.
After hardening and tempering, the blade finishing process follows. Etching highlights the Damascus pattern and makes the layered steel visually stand out.
In addition to the materials included in the course price such as walnut, cherry, mahogany, other woods, horn, and bone materials, a large selection of exclusive handle materials is available for an additional charge, including tropical hardwoods, burl wood, premium hardwoods, stabilized wood, fossil mammoth ivory, teeth, and bones. By the end of the second day, all parts will be prepared and fitted.

All handle materials are glued and pinned to the blades. This ensures that no gap remains between the blade and the handle, preventing moisture from entering. After curing, the handle is shaped until it fits perfectly in your hand. Scratches, dents, and uneven areas are sanded out by hand, then polished and, if necessary, oiled.
Finally, we sharpen your knife to razor sharpness – so that it will bring you enjoyment for many years.

Day 1
At 09:00 we begin the course at the knife forge located at Grebenhainer Str. 3, 36355 Grebenhain.
After a short safety briefing, we will design your custom knife together. Whether it’s a chef’s knife, carving knife, utility knife, Santoku, hunting knife, or outdoor knife – we support you in creating the perfect knife design.
We then begin producing your Damascus billet. Different steels are forge-welded in the fire into a solid piece, and the number of layers is repeatedly doubled through folding and forge welding. Up to 300 layers are possible before the Damascus steel is forged out on the power hammer.
After forging the blade blank, you will grind the contour using an angle grinder and belt grinder. The day ends with annealing the blade in the furnace – after prior normalizing to achieve a fine-grained steel structure.
Day 2
Starting again at 09:00, we continue shaping the knife.
The day begins with grinding the blade. Modern belt grinders and tools are available to help you achieve the most perfect blade possible.
After hardening and tempering, the blade finishing process follows. Etching highlights the Damascus pattern and makes the layered steel visually stand out.
In addition to the materials included in the course price such as walnut, cherry, mahogany, other woods, horn, and bone materials, a large selection of exclusive handle materials is available for an additional charge, including tropical hardwoods, burl wood, premium hardwoods, stabilized wood, fossil mammoth ivory, teeth, and bones. By the end of the second day, all parts will be prepared and fitted.
Day 3
At 09:00 we begin with handle design and finalization.
All handle materials are glued and pinned to the blades. This ensures that no gap remains between the blade and the handle, preventing moisture from entering. After curing, the handle is shaped until it fits perfectly in your hand. Scratches, dents, and uneven areas are sanded out by hand, then polished and, if necessary, oiled.
Finally, we sharpen your knife to razor sharpness – so that it will bring you enjoyment for many years.

Next, the production of the Damascus steel begins. Different steels are forge-welded in the fire into a solid billet; the number of layers is repeatedly doubled through folding and forge welding. Up to 160 layers are possible before the Damascus steel is forged into the size of a knife blade.
Once the blade blank has been forged, the finer details of the knife shape are refined using an angle grinder and belt grinder.
While the Damascus blade blank is being annealed in the furnace, we begin preparing the knife handle. Handle materials such as walnut, cherry, or mahogany are included in the course price. Exclusive materials are available for an additional charge (fossil materials such as mammoth molar are not possible in this course; for that purpose, the 3-day Damascus knife intensive course is recommended).
Day 2
We start again at 09:00 and focus on completing the Damascus knife.
The day begins with shaping the blade edge using files and the belt grinder to achieve the most precise blade possible.
After hardening and tempering, the blade finishing and etching process takes place. This highlights the different steel layers and reveals the Damascus pattern.
Next, all handle materials are prepared, glued, and pinned. This connection ensures there is no gap between blade and handle, preventing moisture from entering. The handle is then shaped to fit your hand, scratches are removed, and the surface is polished.
Finally, we sharpen your knife to razor sharpness – may it bring you many years of enjoyment.
