The Santoku made by Schmiedeglut is our most popular cooking knife and is ideal for meat, vegetables, fish and any kind of soft food. The kitchen knife is given its extreme sharpness and outstanding cutting performance by its special grinding and the stainless steel (Niolox 1.4153.03). Due to a very elaborate hardening process, we are able to produce an exceptionally fine-grained steel structure, which allows cutting edges similar to those of a carbon steel! The knife is sharpened only on one side . This reduces the overall angle. The knife slides easily through your material.
As already mentioned, we use a high-performance steel that is not sensitive to rust. Especially in the kitchen where the knife has alot of contact with acids and juices, the steel is ideal. The fitting made of stainless steel is separated from the handle by an intermediate layer of vulcanized fiber. The Handle consists of a stabilized wood which is extremely insensitive, hygienic and easy to clean. The pores of the wood are closed under vacuum by liquid plexiglass. Thus, no moisture or food particles can enter the handle.
Please do not place the knife in a dishwasher. After using the knife, simply add a drop of detergent to the blade, remove the dirt with a sponge or cloth, wash the knife and dry it as well. Then it can be stowed again on a knife block or with the leather sheath in the drawer.
